Allow all variables to be accessed by all reports / form letters

I don't understand why some reports and client letters restrict the variables that we have access to. You could add a ton of functionality and allow users to really customize how they use the software if they could just access every variable at all time. I can see having a default list of variables to keep user focus, but there should be the ability to add variables. Let us think outside the box.
